Stretching from the Cote de Nuits to the Cote Chalonnaise, and passing via the Cote de Beaune, the estate’s vineyard is both atypical and unique. It spreads over 22 hectares of vines and produces 30 different appellations, a magnificent mosaic of “terroirs”, all farmed organically.


Manual harvesting for the whole estate. The Pinot Noir is 100% destalked.
Around two to three weeks of vatting and fermentation with indigenous yeasts to maintain the typicity of the vintage.
Gentle extraction, based on pumping over the must, with the cap only being punched down a couple of times.
The wines are then raised for twelve months in oak barrels of which just 10 to 15% are new. Then a further six months in stainless steel vats.
Our red wines are not filtered.

After crushing, the whole bunches are pressed. Fermentation without the addition of sulphur.
After a light racking to remove the coarser lees, fermentation takes place in oak barrels.
The wines are then raised for twelve months in oak barrels of which just 10 to 15% are new. Then a further six months in stainless steel vats.
As with our red wines, the white ones remain unfiltered.
