Our philosophy

Our vision of viticulture and vinification

Stretching from the Cote de Nuits to the Cote Chalonnaise, and passing via the Cote de Beaune, the estate’s vineyard is both atypical and unique. It spreads over 22 hectares of vines and produces 30 different appellations, a magnificent mosaic of “terroirs”, all farmed organically.

With a long term vision and anxious to do the best for our vines, we adhere to the demanding code of pratice of organic agriculture, our entire vineyard stock having been certified since 2018.

All our processes are adapted to favour the biological life of the soil and the equilibrium of the plant in each and every different site and individual vine.

Cover crops, composting and ploughing all contribute to the efficacy of this task. In parallel to this procedure, we are experimenting in our parcels of Beaune 1er Cru Montrevenots, Meursault 1er Cru Boucheres and Corton Charlemagne Grand Cru with ploughing by draught horse in order to limit the compaction of the soil: the results are very convincing.

We are following a very simple rationale: to respect the vine and nature right through to harvesting the finest grapes.

Our ambition is to craft athentic wines, respectful of their "terroir" and the vintage. This is our vision of excellence. Each year, we set ourselves the task of producing wines of balance, energy and character.

Whilst accessible in their youth, our various wines reveal a great capacity to age. This ageing unveils a new dimension on tasting.

We want our intervention in the vinification to be as discreet as possible so as to allow our "terroirs" to express themselves and to translate the individual qualities of our wonderful Burgundian vineyard sites.

For this reason, every level of appellation is vinified according to the same technical principles, which are adapted to each wine so that it reaches its full potential.

Vinification of the red wines

Vendange - Vinification des vins rouges

Manual harvesting for the whole estate. The Pinot Noir is 100% destalked.

Around two to three weeks of vatting and fermentation with indigenous yeasts to maintain the typicity of the vintage.

Gentle extraction, based on pumping over the must, with the cap only being punched down a couple of times.

Elevage - Vinification des vins rouges

The wines are then raised for twelve months in oak barrels of which just 10 to 15% are new. Then a further six months in stainless steel vats.

Our red wines are not filtered.

Vinification of the white wines

Vendange - Vinification des vins blancs

Manual harvesting for the whole estate.

After crushing, the whole bunches are pressed. Fermentation without the addition of sulphur.

After a light racking to remove the coarser lees, fermentation takes place in oak barrels.

Elevage - Vinification des vins blancs

The wines are then raised for twelve months in oak barrels of which just 10 to 15% are new. Then a further six months in stainless steel vats.

Non filtrés - Vinification des vins blancs

As with our red wines, the white ones remain unfiltered.
